  • Tomato paste, no added salt, 1 tablespoon(s) (25g)
  • Paprika, dry powder, 1 pinch(es)
  • Olive oil, 1 teaspoon(s) (5ml)
  • Crumpet, 2 round crumpet(s) (100g)
  • Onion, any type, 0.25 medium, thinly sliced (22g)
  • Cherry tomatoes, 6 regular cherry tomato(es), halved (90g)
  • Cheddar cheese, reduced-fat (15% fat), 50 g, grated (50g)

Method

Preheat a grill to medium heat.

In a small bowl mix together tomato paste, paprika, olive oil and one teaspoon of water to form a paste.

Lightly toast crumpets. Line a baking tray with baking paper and place crumpets in the centre. Spread crumpets with tomato paste and top with onion, cherry tomatoes and cheese. Place under the grill for 3-4 minutes, or until cheese has melted and is bubbling. Allow to cool slightly before eating.

TIP: You can use any vegetables you like to top the pizzas. Sweetcorn, capsicum and olives work well.
