  • Hummus, reduced fat, 2 tablespoon(s)
  • Mixed grain bread, no added folic acid, toasted, 4 slice(s), lightly toasted
  • Cos lettuce, 2 cup(s), baby cos lettuce, outer leaves discarded, leaves separated
  • Tomato, 2 medium, ripe, sliced
  • Lamb mince, 400 g
  • Red onion, 1 medium, finely diced
  • Red chilli, 1 chilli(s), seeded and finely chopped
  • Coriander, ½ cup(s), (1/2 cup) roughly chopped
  • Garlic, 1 clove(s), crushed
  • Ginger, fresh, 2 teaspoon(s), grated
  • Natural yoghurt, low fat, ½ cup(s), (1/2 cup)
  • Lebanese cucumber, unpeeled, 1 cucumber(s), seeded and finely diced
  • Fresh mint, ⅓ cup(s), roughly chopped

Method

In a large bowl, mix lamb, onion, chilli, coriander, garlic and ginger thoroughly. Form mixture into 4 patties.

Preheat a grill plate or barbecue grill to high. Add patties and cook for 8 minutes each side, or until cooked through. Meanwhile, in a small bowl, mix yoghurt, cucumber and mint.
 
To serve, spread a quarter of the hummus on each slice of bread. Layer with cos leaves, tomato and a burger patty, and top with a dollop of tatziki.
