  • Olive oil spray, 1 spray(s)
  • Beef fillet, lean, raw, 300 g, 2x 150g steaks
  • Broccoli, 1 head(s), cut into small florets and stems thinly sliced
  • Sweetcorn, raw, 1 cob or ear(s), kernels removed
  • Cherry tomatoes, 1 x 250g punnet(s), halved
  • Lebanese cucumber, unpeeled, 1 cucumber(s), sliced
  • Spring onion, 3 medium onion(s), thinly sliced
  • Coriander, ½ bunch(es) leaves only
  • Jalapenos, 1 tablespoon(s), chopped
  • Lime, ½ lime(s), juiced
  • Avocado, ¼ medium, sliced

Method

Heat a medium frypan over high heat and spray lightly with cooking oil. Add beef and cook for 3-4 minutes each side or until done to your liking. Remove from pan, allow to rest and thinly slice across the grain.

Meanwhile, place broccoli and 1 tablespoon of water in a microwave safe container. Cover with a lid or cling film and microwave for 2-3 minutes or until broccoli is tender.

Add par-cooked broccoli and corn to the same pan over high heat. Cook for 2-3 minutes or until slightly charred.

To serve combine the broccoli, corn, tomatoes, cucumber, spring onion, coriander leaves, jalapenos and lime juice in a large bowl. Top with the sliced beef and avocado.
