Method
Mix oil and mustard together. Brush half over 1 side of the wrap. Arrange half the spinach in the centre of the wrap. Top with beef, tomato, zucchini, carrot and remaining spinach. Roll up to secure, leaving the sides open.
Brush the remaining mustard mixture over both sides of the wrap. Toast in a sandwich press or frying pan for 3 minutes or until toasted. Serve.
TIPS: To make the night or morning before, add all ingredients and wrap tightly in plastic and foil and refrigerate. When ready to eat, brush with remaining oil and mustard, and toast to serve. Check the moisture of your grated zucchini, if need be squeeze the grated zucchini between your hands to remove excess moisture.
