A quick and easy dish to prepare that is great for entertaining. Fried noodles are 5 cm lengths of precooked thin noodles, found in the Asian section of the supermarket.
Method
Heat a large frying pan or wok over a low heat, spray lightly with oil and cook ginger, onions, garlic and chilli gently until soft.
Increase the heat, add chicken mince and cook for a few minutes, breaking up with a wooden spoon. Combine cornflour and egg yolk to form a smooth paste. Drain off any excess liquid from the mince before adding the sesame oil, fish sauce, lime juice, soy sauce, kecap manis (sweet soy sauce) and egg mixture.
Cook for 5 minutes over a medium heat, stirring occasionally, then remove from heat and mix through the fried shallots and noodles. Divide mixture evenly between the lettuce cups and top with coriander and mint leaves.
